C: Nagmamadali ako. Susunduin ko sina Sandy at Jonathan sa istasyon ng shinkansen. Pakibigay na lang kay Yoneda -sensei ang regalo ko para sa kaarawan niya.
N: Matutuwa siya sa regalo mong tsokolate, Ang ganda naman ng takip ng botelya. May retrato ng Osaka Castle!
C: Ginawa nila iyan. Photographer si Jonathan ng mga kastilyo sa Japan at journalist naman si Sandy.
N: Ang ganda naman ng kuha ng Osaka Castle! At may titulo pa ... Takipsilim sa Osaka Castle!
C: Oo nga. Pero nakakalito ang salitang “silim“ dahil sa pagkakaiba ng oras ng paglubog ng araw ayon sa kung saan ka naroroon.
N: Tama ka! Pinakamadaling paraan ng pagtanda nito ay oras ng pagkawala ng anumang sinag mula sa araw. Ibig sabihin kung kailan talagang dumilim.
C: Oo nga. Mas madaling maintindihan.
N: Siyanga pala, puntahan rin ninyo ang Matsumoto Castle sa Nagano, Himeji Castle at iba pang maliliit na kastilyo sa Iga at Shiga.
C: Teka pala, pahiram naman ng kurtina. Gagawin kong takip sa butas ng dingding ko!
N: Ahh ... panakip butas ba?

Dialog in English (FEBRUARY 2024):
N: Cindy, why are you running so fast?
C: I’m in a hurry. I have to pick up Sandy and Jonathan at the bullet train station. Please give my birthday present to Mr. Yoneda.
N: He’ll be very happy with these chocolates. The bottle cover is nice. There is a picture of Osaka Castle.
C: They created it. Jonathan is a photographer of castles in Japan and Sandy is a journalist.
N: The shoot of the Osaka Castle is beautiful. There’s a title, too “Twilight at Osaka Castle”.
C: Oh yes. But the word “dusk” is quite confusing because the time of sunset is different depending on where one is.
N: That’s right. The fastest way to remember it is the time when one can’t see any light from the sun. Meaning when it gets dark.
C: Oh yes. That’s easier to understand.
N: By the way, do go visit the Matsumoto Castle in Nagano, Himeji Castle and the other small castles in Iga and Shiga, too.
C: Hey, wait. Can I borrow a curtain? I’ll cover a hole in my wall.
N: ohh .... is it for covering a hole?

C: Inimbita ako ni Jean para ipakita kung paano isasangag ang bigas para sa sarsa ng kare-kare.
N: Ganoon rin magluto ang nanay ko ng sarsa ng kare-kare.
C: Ang paksa kasi ay tungkol sa mga uri ng bigas ... malagkit, milagrosa, malusog at pinawa.
N: Nagulat nga ako sa bagong uri ng bigas na malusog na proyekto ng Department of Agriculture at International Rice Research Institute sa Los Baños! May bigas pala na kulay dilaw at sagana sa beta carotene.
C: Aba, oo. Matagal na iyan, mga tatlong dekada na ang nakakalipas. Ang tawag diyan ay Golden rice. Hinde nga lang nakikilala ng madla dahil sa iba’t ibang batas ng mga bansa.
N: Talaga? Sayang naman.
C: Alam mo ba na nagpunta rin kami sa Banaue para lang uminom ng “tapuy “?
N: Ang layo naman ng nilakbay ninyo para lang sa tapuy.
C: Tanghaling tapat na pala! Sa bahay ka na kumain ... Gumawa ako ng “mochi “ mula sa malusog variety.
N: Naku, mochi rin ang kinain ko kahapon ng tanghali ... Pero suwerte sa Bagong Taon ang “mochi”.

Dialog in English (JANUARY 2024):
N; Cindy, were you the one I saw at noon in a Documentary about the Philippines?
C; So, you watched it, too!
N: Oh, yes! You were buying rice and had “palitaw” at the opposite side of the marketplace!
C: Jean invited me to demonstrate how to toast rice to make the kare-kare sauce.
N: That’s also how my mother cooks the kare-kare sauce.
C: Because the theme was about different varieties of rice in the Philippines. malagkit, milagrosa, malusog and pinawa.
N: I was surprised about the new rice variety, Malusog, which is a project of the Department of Agriculture and the International Rice Research Institute in Los Baños! There is yellow colored rice and is rich in beta carotene.
C: Oh, yes. That’s been around for a long time. It’s about 3 decades ago. It’s called the Golden rice. It’s just not known to the public because of the different regulations of countries.
N: Really? It’s a shame.
C: Do you know that we also went to Banaue just to drink “tapuy “?
N: You traveled so far just for tapuy.
C: It’s midday already! Have lunch at our home. I made “mochi” using the Golden rice!
N; But I also had mochi yesterday at noon. However, omochi brings good luck in the New Year!

**Karekare ― is one of Filipino stews. It features a thick savory sauce flavored with ground roasted peanuts or peanut butter, onions, and garlic. It is colored with annatto and can be thickened with toasted or plain ground rice or pumpkin The meat ingredients can be stewed oxtail, beef tripe, pork hocks, trotters (calves' feet or pig's feet), various cuts of pork, beef stew meat, and occasionally offal. It also contains a variety of vegetables of your choice. Vegetables can be eggplant and Chinese cabbage, radish, green beans, okra, and asparagus beans. The stew variations can also be vegetable kare kare or seafood kare kare.

**Palitaw ― a Filipino delicacy made by boiling thin oval-shaped glutinous rice dough. It is then coated with grated coconut, toasted sesame seeds, and sugar. It is usually served as snacks or desert. Litaw means “to surface”. The glutinous rice dough is ready when it floats in the boiling water.
―　薄い楕円形のもち米の生地を煮て作るフィリピンの珍味。すりおろしたココナッツ、煎りゴマ、砂糖でコーティングされます。通常、スナックまたはデザートとして提供されます。リタウとは「表面化する」という意味です。もち米の生地ができあがったら、沸騰している水の中で浮かび上がります。
**Milagrosa ― a Thai jasmine rice variety. The name, coined in the Philippines, means “miraculous“ in Spanish
― タイのジャスミンライスの品種。フィリピンで作られたこの名前は、スペイン語で「奇跡」を意味します。
